Castilian cheese made with the most selected milk, collected daily ensuring freshness and quality, which guarantees a better flavor and a great aroma. Made with pasteurized sheep's milk from the Castilla y León herds following our exclusive family recipe. Softer cheese and its consumption is suitable for all ages including pregnant women. This community has very particular characteristics, both for its continental Mediterranean climate, as well as for its diverse vegetation and its extension. These factors make it have a great livestock wealth, being the first producer of sheep's milk. In addition, our sheep cheeses have been awarded 4 International Gold Medals in 2009, 2010, 2016 and 2017.

- Pasteurized sheep's milk, salt, fement, rennet and calcium chloride. Natural rind covering: preservatives E-235 y E-202, artificial colours E-150A and E-160B (ii).
- Organoleptic characteristics
- Appearance: Cylindrical, with grooves that mimic the belt or smooth (depending on the format). When cut: yellowish with few but large eyes. Depending on the time of maturation more or less intense, but always with character. Smell: Aromatic, dairy family, diacetyl. Texture: Buttery, does not crumble. Flavor: Depending on the time of maturation more or less intense, but always with character.
