IGP EL GRAN CARDENAL CURED SHEEP RAW MILK:
Castilian cheese made with the most selected milk, collected daily ensuring freshness and quality, which guarantees a better flavor and a great aroma. Made with raw sheep's milk from the herds of Castilla y León following our exclusive family recipe. This community has very particular characteristics, both for its continental Mediterranean climate, as well as for its diverse vegetation and its extension. These factors make it have a great livestock wealth, being the first producer of sheep's milk. In addition, our sheep cheeses have been awarded 4 International Gold Medals in 2009, 2010, 2016 and 2017.
EL GRAN CARDENAL BLENDED:
Our exclusive cheese made with a high percentage of sheep's milk (60%) and the rest of cow's. Made by family recipe with our mixture of sheep and cow milk, which provides a great balance in the mouth due to its softness and creaminess. Creamy texture, flexible for the most tender and becoming more brittle as it matures. The curing of this cheese depends on the maturation time in cava.
EL GRAN CARDENAL IBERIAN CHEESE:
Pressed cheese. Typical cheese from the Iberian Peninsula, made with sheep, cow and goat milk, according to regulations. Made by family recipe with an exquisite blend of our milks, thereby achieving great intensity and persistence in the mouth. Our Iberian cheese is made with 40% sheep's milk, a much higher percentage than the legally required 15%.
EL GRAN CARDENAL GOAT MILK WITH SWEET PAPRIKA:
Cheese made with goat's milk and coated on the outside with natural paprika (obtained from drying and grinding red pepper), it gives the cheese an attractive reddish color, as well as a very special aroma and flavor. The union of the creaminess of goat's milk and the flavor of natural paprika, is one of the best possible combinations in cheeses.

Depending on the time of maturation more or less intense, but always with character. Smell: Aromatic, dairy family, diacetyl. Texture: Buttery, does not crumble. Flavor: Depending on the time of maturation more or less intense, but always with character. - El Gran Cardenal Semi Matured Blended Cheese: Appearance: Cylindrical, smooth. When cut: yellowish with few but large eyes. Smell: Aromatic, with an intense aroma of the dairy family. Texture: Buttery, does not crumble. Flavor: Depending on the time of maturation more or less intense, but always with character. - El Gran Cardenal Matured Iberian Cheese: Appearance: Cylindrical, with striae that mimics the belt. When cut: yellowish with few but large eyes. Smell: Aromatic, with the presence of the characteristic goat and sheep smell. Texture: Buttery, does not crumble.
