The Extra Virgin Olive Oil made in Castilla y León is more intense, with greater bitterness and itching and a lower fat yield. Oliduero uses a super-intensive cultivation system, with mechanical harvesting avoiding damage due to the olive falling to the ground. The transport to the oil mill is carried out immediately, being able to process the olive fresh to extract all its qualities intact. Extraction of the juice using cold mechanical procedures and using only the first olive juice to maintain its high organoleptic qualities.
